Zimmer and Peacock is hosting a live demo on measuring the pungency of ginger shots.
The FoodSense Generation Four is a handheld device for measuring the gingerol in ginger shots and so determining the pungency of these drinks. The challenge for ginger shot developers and manufacturers is manufacturing reproducibility as the raw material has variable amounts of gingerol and so it is very hard to blend a reproducible shot, but by being able to rapidly measure the gingerol you can objectively determine the pungency and blend accordingly. Again the rapid testing allows for real time adjustments to bring the ginger shot into a reproducible final product.
