The connection between the gingerol in ginger root and the gingerol in ginger powder

We are noticing at ZP that the gingerol in 'fairly' fresh ginger root is in the range 1000 to 3000 ppm, and then in ginger powder this is 10,000 ppm to 30,000 ppm; this lines up with the idea that fresh ginger root is 80 to 90 % by mass water and so the gingerol is approximately increased in concentration by a a factor of 10 X when forming the powder from the root.
