Testing Sriracha Hot Sauce with Food Sense Gen 4

Introduction
Today, we’re putting Flying Goose’s Sriracha Hot Sauce to the test using the Food Sense Generation 4 analyzer. This handheld device measures capsaicin (the compound responsible for heat) and gives us an accurate Scoville rating.
Sample Preparation
Sriracha is a thick, viscous sauce, making precise pipetting tricky. Here’s how we prepped the sample:
Pipetting 100 µL – The sauce clung to the pipette tip, so extra care was needed.
Dilution – Added 400 µL of buffer (1:5 dilution) to extract capsaicin properly.
Mixing – Vortexed for 60 seconds to ensure a homogeneous solution.
Pro Tip: For better accuracy, weighing 100 mg might be preferable for such thick sauces.
Running the Test
Sensor Setup – Inserted a fresh chili sensor into the Food Sense device.
Loading Sample – Vortexed again briefly, then pipetted 50 µL onto the sensor.
Measurement – Selected 1:5 dilution in the app and started the scan.
Results
✅ Scoville Rating: 495 SHU (a mild-to-medium heat level)
✅ Data Traceability – All results are stored in Julie, a cloud-based system for full documentation.
